Gastronomic history constitutes a significant aspect of cultural tourism and destination development, particularly in urban historical cities, where culinary traditions serve as a cultural manifestation rooted in communal memory, identity, and feeling of place. Lucknowi and Hyderabadi cuisines are two of the most distinguished culinary traditions in India, shaped by royal patronage, syncretic cultural histories, artisanal food practices, and evolving urban tourism economies. This study examines the correlation between gastronomic history and sustainable tourist development by comparing Lucknowi and Hyderabadi cuisines. The study employs an empirical research approach utilizing primary data gathered from 600 participants, comprising domestic and international tourists, local residents, food entrepreneurs, hospitality stakeholders, and culinary experts engaged in the food tourism ecosystem of Lucknow and Hyderabad. The study examines the influence of culinary history on the enhancement of destination appeal, tourist satisfaction, cultural preservation, community engagement, local economic growth, and sustainable tourism practices. The research situates itself at the intersection of historical tourism, food tourism, sustainable destination development, and cultural economy studies. It perceives gastronomy not merely as a consumer experience but as a system of living heritage that connects traditional knowledge, local foods, artisanal skills, social rituals, hospitality ideals, and destination branding. The research examines the role of iconic meals, culinary venues, food festivals, street food traditions, traditional cooking methods, and intangible cultural significances in enhancing the tourism attractiveness of Lucknow and Hyderabad. It also analyzes the issues of commercialization, standardization, authenticity erosion, environmental challenges, inadequate documentation of culinary traditions, and the inconsistent incorporation of gastronomy into tourism planning. The research will determine that gastronomic heritage is essential for the advancement of sustainable tourism, as it enhances cultural specificity, prolongs the tourist experience, encourages micro-entrepreneurship, fortifies local supply chains, and boosts the destination's competitiveness. The study contends that the sustainability of gourmet tourism relies on heritage-sensitive legislative frameworks, community engagement, responsible destination marketing, culinary education, preservation of traditional recipes, and environmentally sustainable food service methods. The comparative framework is effective for understanding the similarities and disparities in the evolution of culinary tourism in Lucknow and Hyderabad, influenced by historical legacies, urban branding, governance structures, and current tourism demand. This dissertation contributes to tourism studies by elucidating gastronomic legacy as a strategic asset for fostering culturally grounded and economically inclusive sustainable tourism in Indian heritage cities.
